Spicy Sriracha Chicken Bowl

Ingredients

1 tablespoon olive oil

1 pound (454 grams) chicken breast, diced

2 cloves garlic, minced

1 teaspoon fresh or ground ginger

2 cups (170 grams) broccoli florets

1 cup (92 grams) bell peppers, sliced

2 tablespoons low-sodium soy sauce

1 to 2 teaspoons Sriracha

1 teaspoon honey

2 cups (370 grams) cooked quinoa

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned and cooked through, stirring occasionally, about 5 to 7 minutes.
  3. Add garlic, ginger, broccoli and bell peppers. Stir-fry 4 to 5 minutes. Add soy sauce, Sriracha and honey. Stir well and cook for an additional 1 to 2 minutes. Serve with quinoa.
