Ingredients

1 teaspoon olive oil

1 cup (200 grams) dry, uncooked quinoa

2 cups (473 milliliters) low-sodium chicken or vegetable broth

¼ teaspoon salt

Instructions

  1. Heat olive oil in a medium saucepan set over high heat. Add quinoa and cook, stirring, 1 to 2 minutes, to toast. Add broth and salt, and stir to combine. Bring to a boil.
  2. Lower heat to lowest setting, cover and cook for about 15 minutes. Let stand, covered, an additional 5 minutes before removing from heat. Then allow to stand an additional 5 minutes off the burner, still covered. Fluff with a fork and serve. Makes 4 servings.
