Ingredients

1½ cups packed (43 grams) fresh baby arugula

1 teaspoon lemon juice

1½ teaspoons extra-virgin olive oil, divided

½ avocado, pitted, peeled and sliced

½ cup (80 grams) grape tomatoes

2 plant-based breakfast sausage patties or chicken or turkey sausage patties

⅛ teaspoon sea salt

⅛ teaspoon hot pepper flakes, or to taste

2 tablespoons crumbled plant-based feta or plant-based goat cheese

Instructions

  1. In a salad bowl, toss together arugula, lemon juice and 1 teaspoon olive oil. Fan out avocado slices on top. Set aside.
  2. In a small bowl, toss tomatoes with remaining ½ teaspoon oil.
  3. Set a large cast-iron or other stick-resistant skillet over medium-high heat. Add tomatoes to half the skillet and sausage to the other half. Cook until tomatoes are browned and sausage is cooked through, about 4 to 5 minutes total (or longer if indicated on package directions).
  4. Top arugula and avocado with tomatoes and sprinkle with salt and hot pepper flakes. Then top with sausage and sprinkle with plant-based cheese.
