Ingredients
1½ cups packed (43 grams) fresh baby arugula
1 teaspoon lemon juice
1½ teaspoons extra-virgin olive oil, divided
½ avocado, pitted, peeled and sliced
½ cup (80 grams) grape tomatoes
2 plant-based breakfast sausage patties or chicken or turkey sausage patties
⅛ teaspoon sea salt
⅛ teaspoon hot pepper flakes, or to taste
2 tablespoons crumbled plant-based feta or plant-based goat cheese
Instructions
- In a salad bowl, toss together arugula, lemon juice and 1 teaspoon olive oil. Fan out avocado slices on top. Set aside.
- In a small bowl, toss tomatoes with remaining ½ teaspoon oil.
- Set a large cast-iron or other stick-resistant skillet over medium-high heat. Add tomatoes to half the skillet and sausage to the other half. Cook until tomatoes are browned and sausage is cooked through, about 4 to 5 minutes total (or longer if indicated on package directions).
- Top arugula and avocado with tomatoes and sprinkle with salt and hot pepper flakes. Then top with sausage and sprinkle with plant-based cheese.
