Ingredients

1½ cups (122 grams) quick-cooking or old-fashioned rolled oats

1 cup (~100 grams) vanilla protein powder

¼ teaspoon salt

2 teaspoons baking powder

1 teaspoon apple pie spice

1 cup (246 grams) applesauce or diced apples

½ cup (113 grams) low-fat Greek yogurt or low-fat milk

2 tablespoons honey

2 large eggs

2 teaspoons vanilla extract

1 to 2 tablespoons caramel chips or white chocolate chips

Instructions

  1. Preheat oven to 350°F/180°C. Line an 8-inch-by-8-inch (20-centimeter-by-20-centimeter) baking pan with foil or parchment paper and spray with nonstick cooking spray.
  2. Combine oats, protein powder, salt, baking powder and apple pie spice in a medium mixing bowl, then add applesauce, yogurt, honey, eggs and vanilla extract and mix well.
  3. Spread batter evenly in prepared pan. Sprinkle with caramel chips. Bake 25 to 28 minutes, or until edges are beginning to brown and a toothpick inserted into the center comes out clean.
  4. Allow to cool about 2 minutes in pan before using liner to help transfer bars to a wire rack to cool completely. Store in an airtight container in the fridge for up to 2 weeks.
