Ingredients
1½ cups (122 grams) quick-cooking or old-fashioned rolled oats
1 cup (~100 grams) vanilla protein powder
¼ teaspoon salt
2 teaspoons baking powder
1 teaspoon apple pie spice
1 cup (246 grams) applesauce or diced apples
½ cup (113 grams) low-fat Greek yogurt or low-fat milk
2 tablespoons honey
2 large eggs
2 teaspoons vanilla extract
1 to 2 tablespoons caramel chips or white chocolate chips
Instructions
- Preheat oven to 350°F/180°C. Line an 8-inch-by-8-inch (20-centimeter-by-20-centimeter) baking pan with foil or parchment paper and spray with nonstick cooking spray.
- Combine oats, protein powder, salt, baking powder and apple pie spice in a medium mixing bowl, then add applesauce, yogurt, honey, eggs and vanilla extract and mix well.
- Spread batter evenly in prepared pan. Sprinkle with caramel chips. Bake 25 to 28 minutes, or until edges are beginning to brown and a toothpick inserted into the center comes out clean.
- Allow to cool about 2 minutes in pan before using liner to help transfer bars to a wire rack to cool completely. Store in an airtight container in the fridge for up to 2 weeks.
