Egg-Cellent Oatmeal

In this version, we up the protein with the addition of egg whites. Dried cranberries add a little sweetness, but you can swap them out for fresh fruit or other dried fruits.

Ingredients

1⁄4 cup (20 grams) oats, dry
1⁄2 cup (120 milliliters) low-fat milk
4 egg whites, beaten
1⁄8 teaspoon cinnamon
2 tablespoons dried cranberries
2 tablespoons chopped almonds

Instructions

  1. Heat oats and milk in a small saucepan on medium heat, about 5 minutes, stirring constantly.
  2. Gradually add egg whites while constantly whisking them into the oatmeal mixture. Continue to whisk the oatmeal-egg mixture until the eggs are cooked, about 3 minutes. Once the mixture has thickened, you shouldn’t see any runny egg whites.
  3. Sprinkle with cinnamon, cranberries and almonds.
