Easy Pan-Fried Lemon Chicken


This lemon chicken recipe is a weeknight winner. It’s quick and easy and delivers a flavorful, healthy meal in just minutes.

Makes 2 servings.

Ingredients

12 ounces (340 grams) chicken breast 

2 large carrots, sliced

4 medium stalks celery, sliced

2 tablespoons lemon juice

2½ teaspoons olive oil (separated) 

salt and pepper, to taste

Instructions

  1. Flatten chicken breast with rolling pin or meat pounder.
  2. Place chicken and veggies in zip-close bag with lemon juice, 2 teaspoons olive oil, salt and pepper (to taste). Optional: Marinate for 30 minutes.
  3. Heat skillet over medium-high heat and add ½ teaspoon oil. Add veggies and chicken. Cook chicken 4 to 5 minutes each side, or until done. Let meat rest 5 minutes before slicing. Makes 2 servings.
