Baked Basil Parmesan Chicken
Makes 4 Servings
Ingredients
1 pound (454 grams) boneless, skinless chicken breast
salt and pepper, to taste
juice of ½ lemon
3 tablespoons mayonnaise
2 tablespoons grated Parmesan cheese
1 teaspoon dried basil
Instructions
- Preheat oven to 350°F/180°C.
- Coat a baking dish with nonstick cooking spray and set aside.
- Season chicken breasts with salt, pepper and lemon juice. Place them in coated baking dish.
- In a small bowl, combine mayo, Parmesan cheese and basil. Spoon mixture onto each piece of chicken and spread to create a coating. Sprinkle a little extra Parmesan cheese on top, if desired.
- Bake 25 to 30 minutes, or until chicken is cooked through.
