Ingredients
¾ cup (170 grams) plain reduced-fat Greek yogurt
¾ cup (177 milliliters) low-fat milk
1 large egg
2 tablespoons unsalted butter, melted
1 tablespoon maple syrup
1 teaspoon vanilla extract
1½ cups (122 grams) oat flour
1½ teaspoons baking soda
¼ teaspoon kosher salt
½ cup (120 grams) semisweet chocolate chips
Instructions
- Add yogurt, milk, egg, butter, syrup and vanilla to a blender and blend until smooth. Add oat flour, baking soda and salt. Process to combine.
- Coat a skillet with nonstick cooking spray and place over medium heat. Add batter, using ¼ cup (60 milliliters) per pancake. Scatter 1 tablespoon chocolate chips on top of each. Flip once you see bubbles form on the top. Cook through, about 2 minutes per side.
