Ingredients
1 teaspoon olive oil
16 ounces (453 grams) extra-firm tofu, patted dry and cubed
3 tablespoons cashews
1 medium zucchini, washed and chopped
1 medium bell pepper, seeds and pith removed, sliced into 2-inch slices
1/2 onion, diced
2 cups (60 grams) spinach
2 tablespoons lemon juice
1 cup (195 grams) brown rice, cooked
Instructions
- Heat oil in a large wok or skillet. Add tofu and cook 2 to 3 minutes.
- Add remaining ingredients and cook, tossing frequently for an additional 5 minutes or until vegetables are slightly tender and spinach is wilted.
- Serve atop warmed brown rice.
