Ingredients
1 teaspoon olive oil
12 ounces (340 grams) boneless, skinless chicken breast, rinsed, patted dry, and cubed
3 tablespoons cashews
1 medium zucchini, washed and chopped
1 medium bell pepper, seeds and pith removed, sliced into 2-inch slices
1/2 onion, diced
2 cups (60 grams) spinach
2 tablespoons lemon juice
1 cup (195 grams) brown rice, cooked
Instructions
- Heat oil in a large wok or skillet. Add chicken and cook 4 to 5 minutes.
- Add remaining ingredients and cook, tossing frequently for an additional 5 minutes or until vegetables are slightly tender and spinach is wilted.
- Serve atop warmed brown rice.
