Ingredients
2 pounds (907 grams) boneless beef chuck, cut into 1½-inch pieces
1½ teaspoons salt
1 teaspoon ground black pepper
2 tablespoons all-purpose flour
2 tablespoons olive oil
1 large yellow onion, cut into 1-inch (2.5-centimeter) chunks
3 tablespoons chopped garlic
4 large carrots, peeled and cut into 1-inch (2.5-centimeter) chunks
2 cups (480 milliliters) low-sodium beef broth
1 cup (240 milliliters) water
1 pound (454 grams) small white potatoes, cut in half
1 bay leaf
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
2 teaspoons fresh thyme leaves
Instructions
- Season meat with salt and pepper, then dust with flour.
- Add olive oil to a large stockpot or Dutch oven and place over medium-high heat.
- When oil is hot, add beef in batches to pot. Brown on all sides, about 3 to 4 minutes. Transfer to a plate and set aside.
- Add onions, garlic and carrots to hot pot. Cook, stirring occasionally, 2 to 3 minutes, or until slightly browned. Add broth and water to pot and let cook 1 to 2 minutes to deglaze the bottom of pot.
- Add potatoes, bay leaf, tomato paste, Worcestershire sauce and thyme to pot. Stir to combine. Bring mixture to a simmer and then return beef to pot.
- Cover and simmer over medium to low heat for 60 to 90 minutes or until beef is fork-tender. Remove bay leaf before serving.
