Apple Ginger Crisp

Ingredients

½ pound (223 grams) apples, thinly sliced 

juice of ½ lemon (about 2 tablespoons)

¼ teaspoon cinnamon

⅛ teaspoon nutmeg

Topping 

3 tablespoons ground flaxseeds 

3 tablespoons water

1-inch (2.5-centimeter) piece ginger, finely minced or pressed

¾ cup (61 grams) rolled oats 

1 tablespoon turbinado sugar

1 tablespoon whole-wheat pastry flour

¼ teaspoon cinnamon

⅛ teaspoon nutmeg

1 cup (227 grams) reduced-fat Greek yogurt

Instructions

  1. Preheat oven to 400°F/200°C.
  2. Toss apples with lemon juice, cinnamon and nutmeg.
  3. Lightly coat an 8-inch-by-8-inch (20-centimeter-by-20-centimeter) baking dish with cooking spray. Spread apple slices evenly in dish.
  4. In a small bowl, combine flaxseeds and water and let set to form a gel. In a medium mixing bowl, combine ginger and remaining dry ingredients. Add yogurt gradually and crumble mixture between your fingers so it “clumps” together. Add more yogurt or water to reach desired consistency.
  5. Drop yogurt mixture “crumbles” onto apples. It’s OK if some of the fruit is not covered. Bake 20 to 25 minutes.
