Ginger-Soy Steamed Fish Packets

Makes 2 servings

Ingredients

2 (6 ounces/170 grams each) whitefish fillets (cod, mahi-mahi or halibut)

1 cup (149 grams) sliced bell peppers

1 cup (124 grams) snap peas

1 tablespoon low-sodium soy sauce

1 teaspoon grated ginger

1 clove garlic, minced

1 teaspoon sesame oil

Instructions

  1. Heat oven to 375°F/190°C.
  2. Place each fish fillet on a large piece of aluminum foil or parchment paper. Add veggies evenly around fish.
  3. In a small bowl, combine soy sauce, ginger, garlic and sesame oil. Pour mixture over fish and veggies.
  4. Create a packet with foil and seal edges. Place packets on a baking sheet and bake 15 to 20 minutes. Serve straight from packet with rice.
