Cucumber and Tomato Salad

Prep Time: 10 minutes | Makes 2 servings

Ingredients

2 cups cucumber, cut into cubes

4–5 heirloom medley tomatoes, halved

6 Kalamata olives, quartered

1/4 red onion, sliced thinly

1/4 cup walnuts

1–2 teaspoons dried oregano(or 2 tablespoons fresh oregano)

4 tablespoons aged balsamic vinegar

2 tablespoons olive oil

1/4 teaspoon salt

Instructions

  1. In a large bowl, combine cucumber, tomatoes, olives, and walnuts.
  2. In a separate bowl, whisk together oregano, balsamic vinegar, olive oil, and salt. Pour the dressing over the cucumber mixture, toss well, and serve.
