Apple Walnut Baked Oatmeal

This baked oatmeal is a tasty combination of sweet apples, crunchy walnuts, and hearty oats. It’s a great source of fiber, protein, and healthy fats, keeping you full and energized throughout the morning. Plus, the warm spices of cinnamon and nutmeg add a cozy touch that’s perfect for chilly mornings.

This recipe is easy to prepare and can even be made ahead of time for a grab-and-go breakfast option. Simply combine the ingredients, bake until golden brown, and enjoy a warm and satisfying meal that will nourish your body and soul.

We made this recipe with walnuts, but if you prefer a milder and slightly sweeter taste, swap them out for pecans.


Ingredients

2 tablespoons salted butter

2 cups (220 grams) diced, skinless apples

¾ teaspoon plus ¼ teaspoon cinnamon, divided

1 cup (81 grams) dry quick-cooking oatmeal

¼ cup (113 grams) chopped walnuts or pecans

½ teaspoon baking powder

¼ teaspoon salt

1 cup (237 milliliters) low-fat milk

1 large egg

1 teaspoon vanilla extract

¼ cup (84 grams) honey

½ cup (122 grams) unsweetened applesauce

Instructions

  1. Heat butter in a medium skillet over medium-high heat. Add chopped apples and ¼ teaspoon cinnamon. Cook, stirring occasionally, until apples are slightly soft, about 2 to 3 minutes. Remove from heat and set aside.
  2. Preheat oven to 375°F/190°C. Spray an 8-inch-by-8-inch (20-centimeter-by-20- centimeter) or 9-inch-by-9-inch (23-centimeter-by-23-centimeter) baking pan with nonstick cooking spray and set aside.
  3. Combine dry ingredients in a medium bowl.
  4. In a separate bowl, whisk together milk, egg, vanilla, honey and applesauce. Then add wet ingredients to dry and stir well.
  5. Add cooked apples to the bottom of prepared baking dish. Pour oatmeal mixture over the top and bake 28 to 30 minutes, or until the top is golden brown and oatmeal has set. Serve warm. Store leftovers in the fridge. Makes 6 servings.
